Chicken, Sweet Potato and Bacon Soup...Need I say more?

What's better than a simple, filling, easy to make soup recipe? Really not much in my opinion. Since I'm still commuting back and forth between school, home and work soup is one of my favourite take away meals. I love hardy filling soup that's basically a meal.

For this you need one large frying pan and a medium sized pot. I prefer to fry items before putting them into soup. Not a fan of stewed bacon. The chicken you use should be fried beforehand and diced.

This amount makes 3 generous bowls

Ingredients:

- 3 pieces bacon

- 1/2 cup chopped onion

- 1 celery stalk chopped (1/4 cup)

- 1 cup sweet potato (cubed)

- 2 cups chicken broth (you can use chicken, beef or vegetable broth)

- 1 cup chicken (approximately one chicken breast already pan fried and diced)

- 1/4 cup chopped garlic

- 1/16 tsp thyme - 1/16 tsp paprika - 3/4 tsp salt - 1/2 tsp pepper

- 1/16th ginger

Cooking Instructions:

In a frying pan over medium heat begin frying the bacon until browned or crisp. Remove and remove some of the excess oil before frying the onions.Fry until light brown then add in the garlic.

Once both are browned lightly add the chopped sweet potato and celery to sweat a little, cover with a lid. As the sweet potato and celery are sweating begin heating the chicken broth in the separate pot.

After the broth is simmering add all the ingredients from the frying pan, bacon and the chicken into the pot. Then add the thyme, paprika, salt, pepper and ginger. Allow soup to simmer until vegetables are soft but not mushy.

You can serve with noodles / rice or without depending on how much of a meal you want it to be.
